One question we often hear from both Indian and Vietnamese customers is: “Why does dal at restaurants always taste better than what we cook at home?” The answer is not about expensive ingredients. It’s about understanding and using the right type of lentils. In Indian cooking, dal is not just “lentils cooked with spices”. Different lentils serve different purposes. And among them, Toor Dal and Chana Dal are two of the most essential. Toor Dal cooks down into a soft, almost creamy texture. It forms the base of many dal dishes, giving them a smooth and comforting consistency. This is what you usually find in everyday dal or sambar. Chana Dal, on the other hand, holds its shape even after cooking. It has a firmer bite and a nuttier flavor, adding texture and structure to the dish. And this is where the real difference lies. At home, many people use just one type of lentil, often Toor Dal because it is easier to cook. The result is a dish that tastes correct, but feels flat — smooth but lacking contrast. In professional kitchens, it’s common to combine both. Toor Dal builds the smooth base. Chana Dal adds body and bite. This combination creates a more balanced and satisfying dish, where every spoon has both creaminess and texture. Of course, restaurants also pay attention to soaking time, cooking control, and the final tempering (tadka). But at the core, what makes the biggest difference is simply this: choosing the right lentils and using them intentionally. If your dal tastes “okay but not great”, the issue might not be your spices — it might be the way you’re using your lentils. Trong ẩm thực Ấn, dal không chỉ là “đậu nấu lên”. Mỗi loại đậu mang một vai trò rất khác nhau. Và hai loại phổ biến nhất chính là Toor Dal và Chana Dal. Toor Dal khi nấu lên sẽ mềm, gần như tan ra, tạo cảm giác mượt và dễ ăn. Nó giống như phần “nền” của món dal – giúp món ăn có độ sánh và dễ thấm gia vị. Những món dal quen thuộc trong bữa ăn hàng ngày hay sambar đều dựa rất nhiều vào loại đậu này. Ngược lại, Chana Dal lại có kết cấu chắc hơn, không bị nát khi nấu. Khi ăn sẽ có cảm giác bùi, rõ hạt, và “có nhai”. Nó không làm món ăn mịn đi, mà làm món ăn thú vị hơn về mặt texture. Và đây chính là điểm khác biệt lớn giữa nấu ở nhà và nấu ở nhà hàng. Rất nhiều người khi nấu dal tại nhà chỉ dùng một loại đậu. Thường là Toor Dal cho dễ nấu. Kết quả là món ăn tuy đúng vị cơ bản, nhưng lại bị “một màu” – mềm nhưng thiếu điểm nhấn. Nhưng nếu phải chọn một yếu tố cốt lõi nhất, thì vẫn là chọn đúng loại đậu và dùng đúng cách.
